Oh how I dreaded this day. The whole week I told myself “Ashley, You have to be strong! You can’t let into temptation!” I knew this day would be, if any day the break to my diet. All the good things that come with Easter, mashed potatoes, pies, ice cream, cakes, gravy, you name it it’s there. Great isn’t it?
So here was my plan, I’ll eat real light in the morning for breakfast and for lunch and then when dinner came around I wouldn’t really have to worry about how much I ate. Yah I know that plan is stupid but at the time I was trying to find an excuse for being a little naughty during dinner time. Oh and not to mention the great Easter egg hunt we had for Alex. That just brought more temptation into the house. BTW Alex was so excited and super cute. We gave him a basket and little bunny ears to wear while he did his hunt. Anyways back to Easter dinner. I had the typical dinner. I shared it with my son, grandma, boyfriend and his parents. We had prime rib (I didn’t really eat any), mashed potatoes, peas and carrots, rapini, gravy and so on. For dessert there was a choice of three things; chocolate cake, rice pudding, and sweet bread. I just had the rice pudding. My grandma makes the best rice pudding ever and I just couldn’t help myself.
Yah, a good dinner eh!? The good thing about it all is I didn’t over indulge. I had small portions of everything. This way I wasn’t feeling like poop and comatose from all of the food. I give two thumbs up for my Easter day!
